I had one kilogram of beetroot in my refrigerator, with little idea of what to make with it. I wanted to try something unique instead of the usual routine of adding it to smoothies or eating it raw with apple cider vinegar. I wanted something warmer – something that would be perfect for a cold winter day.

I looked at various ways to cook beetroots and opted to create a “healthier pizza” crust. This flourless beet pizza crust has a humid and smooth texture. It’s so easy to make, you will only need a few simple ingredients, blend everything, put it into the oven, and that’s it. If you enjoy pizza but want something healthier – this is the healthier pizza base alternative you have been looking for.

For my toppings, I went with caramelized onions, pumpkin seeds and rocket pesto. This combination adds unique textures and flavours. It’s also loaded with vitamins, minerals, fibre, phytonutrients, veggies and more. 

It turns pizza into a healthy snack or side dish. 

4 Reasons To Add Beetroots To Your Diet 

Beetroot is an underrated winter root vegetable but has grown in popularity recently for its superfood status. It’s filled with vitamin C, iron, potassium, fiber, vitamin B9 and manganese. As such, there are numerous health benefits to eating beetroots, including but not limited to:

Athletic Performance 

Studies show that eating beetroot can better fuel-efficiency in the muscles and improve stamina. Betaine is the methylated version of glycine that researchers have proven helps with muscle power, strength and growth.

Blood Pressure 

Several studies have shown beetroots have nitrates that are changed into nitric oxide, helping to relax and widen the blood vessels. This helps to lower blood pressure and improve the flow of blood. 

Inflammation 

Despite what you may think, beetroots’ pigment is way more valuable than to give the vegetable its color. The pigment is known as betaine – a vital nutrient that comes from choline (a B-complex vitamin) and helps reduce inflammation. 

Mood Improvement 

Beets are a great source of both tryptophans (amino acid) and betaine anhydrous (chemical) that have demonstrated their effects on mood improvement. However, the body does not produce tryptophan, which means the only way to get it is through food. Tryptophan-containing foods cause the body to generate serotonin (the happy hormone). 

If you’re feeling down, adding beets can help boost your mood.

Beets ‘pizza’ crust

Description

If you want a new way to eat pizza that includes beetroots and adds more veggies, fibre and nutrients to your diet, you definitely need to consider this recipe.


Ingredients

Units Scale

Crust

  • 600g beetroot, with skin
  • 3 large eggs
  • 2 tbsp psyllium husk
  • 4 tbsp oats
  • 1 tsp salt
  • 1/2 tsp pink pepper (optional)

Caramelised Onion

  • 4 red onions, sliced
  • 1 tsp honey
  • 1 tsp olive oil

Rocket Pesto

  • 1 lemon juice and zest
  • 100g rocket
  • 120g pesto (I like Biona pesto)
  • 50g basil

Pumpkin seeds (lightly toasted) to sprinkle

 


Instructions

Caramelized Onion: Pour olive oil into a pan when warm, adding the sliced onions to caramelize them. This can take up to 25 minutes. When the onions are soft, add honey and mix well. 

Beetroot Crust: Place ingredients into a food processor, pulsing into a creamy paste is created. Put the spread into a lined baking sheet and bake for 25 minutes at 200 degrees Celsius (or 400 degrees Fahrenheit). 

Rocket Pesto: Place the ingredients into a food processor, pulsing until you get a creamy, somewhat coarse pesto. Add seasonings until your liking. Pout the pesto into a clear jar can be sealed tightly. 

To serve: Take the crust from the over, cut to taste. Put a couple of tablespoons of pesto, toasted pumpkin seeds and caramelized onions on it, and enjoy.
