This is such a fresh and light dessert. Perfect for when you don’t fancy a heavy dessert but still want a sweet taste after your meal.
The pineapple is merged in a maple syrup infused with lime and vanilla extract, resulting in a delicious combination. It’s better to marinate it overnight so the pineapple juices and the infused syrup blend to perfection.
This fresh pineapple recipe is also super quick and easy to prepare. In 15 minutes, you have a healthy dessert ready to be devoured.

You will only need 1 ripe pineapple, 2 limes, maple syrup, vanilla and a bit of salt. I also added lime kaffir leaves but this is optional, and I served with coconut yoghurt – I love the combination of pineapple and coconut.
Pineapples are rich in nutrients, such as vitamin C, B6, manganese, and compounds that reduce oxidative stress and inflammation. Bromelain, a digestive enzyme that breaks down proteins, is also found in pineapples. This may help with digestion, especially in people who have pancreatic insufficiency.

Fresh Pineapple Dessert with Lime

Ingredients
- 1 Ripe Pineapple
- 2 Limes (juice and zest)
- 30 ml Maple Syrup
- 1 tsp Vanilla Extract
- 1 tbs Kaffir Limes (optional)
- Coconut Yoghurt to Serve
- Pinch of salt
Instructions
- Start by preparing the syrup by combining the maple syrup, lime juice and zest, vanilla, kaffir limes and a sprinkle of salt. Bring it to a boil for two minutes, stirring frequently. Set aside to cool completely.
- Top and tail the pineapple, then slice off the skin. Finely slice the pineapple into rounds. Keep the core for extra fibre.
- Pour the syrup over the pineapple and combine it well. Let the pineapple fully marinate in this syrup.
- Et voila. Serve with a spoon of coconut yoghurt and enjoy.
